What will you do in this job?:
Collaborates closely with Maligne Lake F&B Manager, Operations and Programming teams in building up all elements of the culinary experience at the new Maligne Lake dining venues
Develops, in collaboration with the Corporate Chef, Exec Chef Jasper & MV and GM F&B Jasper & MV, menus, presentation and costing for all food outlets at Maligne Lake
Takes ownership of core standards as developed by the Corporate Chef and Exec Chef Jasper & MV
Develops standard recipes and techniques for food preparation which help to ensure efficiency, consistency, quality and to minimize food costs
Exercises portion control for all items served and assists in establishing menu selling prices
Establishes controls to minimize food and supply waste
Approves the requisition of products and other necessary food supplies
Liaise with food stores to ensure proper rotation and par stocks of all foods
Cooks or directly supervises the cooking of items that require skillful preparation
Reports to & collaborates with Maligne Lake Food & Beverage Manager to assure that food production consistently exceeds the expectations of guests, and assist in maintaining a high level of service principles
Schedules and coordinates the work of Chefs, Cooks and other kitchen employees to assure that food preparation is economical, technically correct and within budgeted labor cost goals
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles
Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment
Develops policies and procedures to enhance and measure quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminology
Provides training and professional development opportunities for all kitchen staff
Periodically visits dining area when it is open to welcome members
Support and monitor safe work habits and ensures a safe working environment at all times
Interview, select, train, supervise, counsel, mentor and guide employees
Provide, develop, train, mentor and maintain a professional work force
Ensure a safe working environment and attitude on the part of all employees in areas of responsibility
Adherence to financial forecasts and budgets; instrumental in taking steps to assist the division in exceeding Food and Beverage targets
Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met
Takes all necessary actions to produce food cost and labour cost results that meet or exceed budgeted expectations
What skills and experience do you need for this job?:

Enthusiastic, energetic person who is capable of delivering results in a very unique environment
Minimum four years well rounded experience in all areas of the kitchen at a Chef level
Conduct monthly inventory counts
An effective leader, manager, trainer, administrator and team player
Strong communication and organizational skills
Must be innovative, detail oriented and quality conscious
A love and a passion for food plus a good sense of taste and smell
Creates a product that is delicious, authentic, sustainable, fresh and new
Leads confidently, building strong and engaged teams
