Job Description

Chef de Cuisine

Work with our team of Chefs creating world class dining experiences for our guests. This is your opportunity to work in a Kitchen committed to preparing and serving the finest meals.

What you will be doing:

Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:

Consistently offer professional, friendly and proactive guest service while supporting fellow colleagues
Ensure the consistency in the preparation of all food items according to hotel recipes and standards
Conduct daily shift briefings to kitchen colleagues and ensure all kitchen colleagues are aware of standards & expectations
Liaise daily with restaurant Managers to keep open lines of communication regarding guest feedback
Maintain and enhance the food products through creative menu development and presentation
Ensuring proper and adequate levels of food are held and ordered through birchstreet procurement system
Have full knowledge of all menu items, daily features and promotions
Actively interact with guests at tables
Balance operational, administrative and colleague needs
Ensure proper staffing and scheduling in accordance to productivity guidelines
Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
Follow kitchen policies, procedures, service standards and monitor performance
Monitor all safety and sanitation policies when handling food and beverage
Adhere to menu engineering program and create seasonal and holiday menus according to hotel guidelines
Control outlet food cost, through menu engineering, production efficiencies, and food waste reduction
Active in planet 21 initiatives
Coach and mentor sous chefs and culinary colleagues
Conduct corrective disciplinary action forms and documentation as needed
Supervise the proper food rotation and daily temperature log book completion
Adhere to and follow ALL SAFE health and safety protocols, ensure all colleagues are trained and held accountable for the set standard
Place work orders for items needing repair
Other duties as assigned

Qualifications

Your experience and skills include:

3-4 year’s high volume culinary management experience in a luxury hotel or large kitchen environment
Red Seal Certificate (Journeyperson’s papers) or recognized international equivalent required
Safe Food Handling Certification required
Proficient in Microsoft windows applications word, excel, power point, and birchstreet
Ability to focus attention on guest needs, remaining calm and courteous at all times
Possess strong leadership, organization, time management & communication skills
Strong Skills in visual presentation of food, with a familiarity with contemporary serving styles; Attention to detail, accuracy and consistency with recipes and plating
Works well with others, demonstrates good team spirit with an open mind
Able to lift, carry and pull up to 50lbs and able to constantly stand and walk throughout shift
Able to withstand exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezers

Standing - 6-8 hrs/day
Bending/Reaching - 1-3 hrs/day
Pushing/Pulling - 1-3 hrs/day
Physical Effort - may lift weights up to 50lbs
Environmental Stress - High - works mainly inside, however outside work may be required
