Job Description

Pastry Cook

What you will be doing:

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

Consistently offer professional, friendly and proactive guest service while supporting fellow colleagues;
Prepare and bake a verity of baked goods;
Prepare, cook & service all food items or individual dishes according to hotel recipes & standards;
Have full knowledge of all menu items, daily features and promotions;
Train junior staff in preparation, cooking and handling of food;
Maintain inventory and records of food, supplies and equipment;
Ensure cleanliness & maintenance of all work areas, utensils, and equipment;
Organize and manage buffets and banquets;
Prepare dishes for customers with food allergies or intolerances and handle guest allergy concerns with appropriate care and importance by reporting to Sous Chef;
Control waste and spoilage in the assigned department;
Ensure proper labeling, dating and storage of all items in the kitchen;
Follow kitchen policies, procedures, and service standards and follow all safety and sanitation polices when handling food and beverage;
Responsible for ensuring preparation of all pertinent food items for work station and able to maintain the departments level of production and guest expectations in the absence of the Chef de Partie;
Monitor present and upcoming business volumes as well as food items and to communicate relevant information to their department in a timely manner;
Other duties as assigned;

Qualifications

Your experience and skills include:

Has knowledge of how to work with Sugar, Chocolate, Marzipan, Wedding Cakes, and all Bakery aspects
Knowledge of finishing methods and techniques.
Basic celebration cake building and icing.
Knowledge of various doughs.
Has worked with laminated dough; Danish Dough, Croissant Dough, Puff Pastry, able to form danish and croissants.
Has the ability to understand Food Cost, and Labor Cost
Unimpaired perception of color, taste, and other sensory elements necessary to critique food properly
Has knowledge of commercial equipment such as Rational Ovens, Proofer, Dough Divider, and Scales
Has extensive knowledge of banquet business
Menu development, menu language, and interpretation
Knowledge of Birchstreet purchasing systems
Must have personal set of culinary/pastry tools required to perform one’s job
5-7 years’ experience as a leader with luxury hotel kitchens
Red Seal Journeyman’s papers or international equivalent required
Holding a valid safe food handling certification
3-4 years’ experience in kitchen setting
Previous experience working in a fast paced, large kitchen environment
Proven organizational and coaching skills
Previous leadership experience in the culinary field required team
Ability to focus attention on guest needs, remaining calm and courteous at all times
Computer literate in Microsoft windows applications word, excel, and power point
Constant standing and walking throughout shift
Describe Motions- Bending, standing, reaching, cutting, lifting, pushing, repetitive physical movements, dexterity and full range of motion of hands to whisk, scoop, cut scale, shape and move product as needed.
