Job Overview
Lead a team to achieve financial goals: budget, forecast, control food and labour costs.
Proactively take steps to drive outlet Food and Beverage targets and become a top culinary destination for culinarians within Alberta.
Analyze monthly P&L and month end reporting and identify deviation from business plan.
Participate in Management meetings and review opportunities and achievements for business plan goals.
Prepare weekly staff schedules keeping in mind anticipated business, operating budgets and standards of service.
Lead the culinary team during Banquets, Restaurant service, Off-site Events & Group Event Management functions.
Execute a progressive and inspired product that differentiates the restaurant from its competitors.
Work with Executive Chef to develop new menus and products supported by analysis and accurate costings.
Ensure a high level of food safety management and precautions with regard to the Alberta food safety and hygiene standards are adhered to-Certified Advanced food Safety Training is an asset.
Ensure that all departmental reports, schedules, standard recipes, menus, food presentation for photographs and correspondences are completed in an accurate and timely manner.
Adhere and Train all culinary employees to follow safety, sanitation, recipes and policies and procedures
Work collaboratively with multiple departments: sales, marketing, lodging and group services in executing of events.
Implementation of all seasonal menu launches, food presentation, recipes, and food costing of all items in conjunction with Executive Chef of Jasper Lodging
Foster a positive, diverse, and inclusive work environment.
Create a culture of empowerment, teamwork, continuous improvement, and a passion for positivity while providing exceptional hospitality of guests and the organization.
Motivate, supervise and discipline team members with a degree of professionalism following Pursuit’s policies.
Leading by example in maintaining the integrity of the rules, regulations, and operating procedures
Work with human resources for recruiting and onboarding to build a high functioning and positive team with a continued focus on retention and succession planning.
Conduct performance review with team members and identify team members with potential for growth and foster a succession plan.
Maintain accurate par levels for ordering using approved vendors; ensure proper rotation and par stocks of all foods are being handled.
Ensure that all departmental reports, schedules, standard recipes, menus, food presentation for photographs and correspondences are completed in an accurate and timely manner.
Continually evaluate the food program processes; proactively taking action to capitalize on opportunities for growth in efficacy and quality.
Develop, conduct and maintain records of all staff training programs for team members, focusing on their development needs, providing them with new skills to meet the changing demands of the business.

Job Requirements 
Diploma from a reputable Hospitality Management / Culinary school preferred.
Additional certification(s) in Food & Beverage will be an advantage.
Certified Advanced food Safety Training is considered an asset.
Excellent reading, writing and oral proficiency in English language.
Proficient knowledge of MS Excel, Word, & PowerPoint
Red Seal Certification or Equivalent certification required.
