Full Job Description
Mallard Mountain Lodge is looking for chefs immediately for this winter!

Ideal candidates should be comfortable working unsupervised in remote mountain environments and interacting directly with guests.

Mallard Mountain Lodge is a remote backcountry ski touring lodge, candidates must be able to get to themselves to the staging area in Valemount BC for the beginning of work weeks. Compensation for travel and accommodation expenses.

Responsibilities/Requirements

The main role of this position is the planning and preparation of meals at the lodge for guests and staff during their trips. Specific details include:

Development of weekly menu
Cooking and serving of all meals throughout the week: Breakfasts, lunches, appetizers, dinners, desserts
Planning of weekly menu items, preparation of grocery lists and management of food inventory
Purchasing and packing of weekly grocery lists for helicopter transport
Cleaning and maintenance of all kitchen equipment, appliances, dishes and utensils
Proper and safe use of all kitchen equipment and appliances
Keeping the kitchen and dining areas clean and tidy
Adherence to proper food preparation and service regulations, as well as specific lodge safety procedures/protocols
Must be able to work both independently or with a team in a very remote location
Qualifications:

Must have current FoodSafe and Serving it Right certifications.
Experience in cooking, menu preparation and inventory management
Specific backcountry work experience and knowledge is preferred but not mandatory
